A few years ago I was searching for a new recipe to make for chicken when I stumbled upon one for "beer chicken." Instructions were for grilling. Well since I live in Ohio, & it happened to be in the dead of winter, I was not venturing outside to the grill. I wasn't giving up on trying to make beer chicken though, that was the beginning of perfecting this recipe. I use any left over chicken (if there is any) in several of my other recipes that call for cooked chicken. It's easy, tasty, and so tender it literally falls right off the bone! And the juices make a wonderful gravy! **Family Fav!

Ingredients For blue moon crock pot roasted chicken

  • 6 lb
    whole baking chicken
  • 2 clove
    whole garlic, peeled
  • 1 sm
    onions, quartered
  • 2 Tbsp
    butter, melted
  • 1/4 tsp
    rosemary, dried or fresh sprigs
  • 1 tsp
    oregano, dried or fresh chopped
  • 1 tsp
    basil, fresh chopped or dried
  • 2 tsp
    parsley, italian
  • 1/2 tsp
    thyme, dried
  • 2
    bay leaves, dried
  • 1 tsp
    kosher salt
  • fresh ground pepper to taste
  • 1-12 oz
    bottle of blue moon beer (or your favorife beer) we prefer blue moon, the tangy taste mixes well with the flavor of the chicken

    onion, sliced

How To Make blue moon crock pot roasted chicken

    Set 5 quart crock pot to Low temp. Remove neck, & innards from inside chicken. Rinse chicken well with cold water. Place quartered onion, 2 whole garlic cloves, & bay leaves inside chicken & set inside crock pot, timer up. This allows the garlic, onion and bay leaves to infuse from the inside & throughout the meat.

    Melt butter. Drizzle over chicken & rub into skin with fingers. I call it massaging the meat (a lil kitchen humor). In a small bowl, add rosemary, parsley, oregano, basil, thyme, salt, & pepper. Mix together. I use fresh when available, but dried is just as good! You can adjust seasonings to your taste. Sprinkle mixed seasonings over chicken. Chicken will be covered well.

    Pour beer around chicken, not over. Place sliced onion on top of and around chicken.

    Cook on low heat for 6-8 hours, or until timer indicates chicken is done. Cook times will vary depending on weight of chicken. Side note: I periodically "baste" the chicken if I'm home to do so.

    When chicken is done, it will be very tender, and fall apart when removing from crock pot, I use 2 large slotted spoons, one at each end of the chicken to gently remove from crock pot to keep chicken together. Don't fret if it falls apart..... allow to stand for 10 minutes to allow juices to soak in, cut & serve. Strain juices in crock pot and use to prepare gravy or your favorite home made chicken soup!
