Ingredients For betty's greek chicken and potato tray bake

  • 4 pounds
    chicken pieces, skin on
  • 2 pounds
    potatoes, chopped in large chunks or halves (i like red potatoes)
  • 3/4 c
    lemon juice, fresh or from a bottle
  • 1 tsp
    dried oregano
  • 1 Tbsp
    crushed garlic
  • 1 Tbsp
    oil, i like olive
  • 1/2 tsp
    salt

How To Make betty's greek chicken and potato tray bake

    Preheat oven to 400 degrees.

    Place potatoes in a large and deep baking tray. Wedge the chicken prices on top - skin side up.

    Put remaining ingredients in a measuring jug and stir. Pour/drizzle over the chicken - do this slowly. Cover with foil and bake for 45 minutes. Remove foil and bake for another 45 minutes.
