Recipe adapted from Company's Coming- Chinese Cooking and tweaked a little. This is the best ever chicken.

Ingredients For best tasting sweet and sour chicken bites
- CHICKEN BITES:

1 call purpose flour

3 Tbspcornstarch
-
3/4 tspseasoned salt (lawry's)

3 lgeggs

4 to 5 tspwater

3 lgchicken breasts, boneless and skinless

for fryingcanola oil
- SWEET AND SOUR SAUCE:

1/2 lgonion, chopped
-
14 ozcan pineapple tidbits, do not drain

1/2 cbrown sugar, firmly packed

3 Tbspapple cider vinegar
-
1/2 tspsalt
-
1/2 cwater
-
2 Tbspcornstarch
-
1/2 mdgreen pepper, chopped
How To Make best tasting sweet and sour chicken bites

1Chicken Bites: In a Dutch oven or deep-fryer heat the oil to 375^. Combine flour,cornstarch and salt in a large bowl. Crack eggs into a small bowl and add the water and whisk until blended. Combine flour to the egg mixture blending until smooth. Add chicken. Stir to coat well.

2With a fork, drop chicken one piece at a time into hot oil. Cook in batches, making sure to not over- crowd the pan. Cook until golden brown about 5 minutes. Remove and drain on paper toweling.

3Sauce: In a saucepan, fry the onion in a Tablespoon of oil, until they start to soften.Add the pineapple and juice, brown sugar, vinegar and salt. Bring to a boil.

4In a measuring cup combine the cornstarch and water , stir until dissolved. Add to pineapple mixture and add the green pepper. Simmer 2 minutes until thick. Pour over chicken to serve over rice or pasta.

5NOTE: Both the chicken and the sauce can be frozen separately. Once the chicken is completely cooled and drained, place in a ziploc freezer bag;you can even divide into individual serving size bags. To cook from frozen. Place on baking sheet frozen and bake at 400^ for 15-20 minutes, until crisp and heated through..or in the microwave for about 5 minutes.Then crisp in oven. --- Sauce: Allow to cool. Divide into freezer bag or bags. Thaw and heat in microwave.
