beer can chicken --- on vacation!!!
(1 rating)
This grilled chicken, well, NOT GRILLED, (but placed in the oven), is delicious. I had a whole chicken, and I made a "BEER CAN CHICKEN RUB" that I put on the chicken, and refrigerated for 6 hours. Place about 1/2 can (12oz), of beer (no choice on beer), and place the chicken, (bottom side over the beer can). Let set for 1/2 to 1 hour before putting the chicken (on vacation), in the oven!! This chicken was tender and melt-in-your-mouth juicy! The taste was unbelievable. Try it, you might like it...ENJOY!

How To Make beer can chicken --- on vacation!!!
-
1`
-
2Take all ingredients of "chicken beer rub" and combine all in a airtight jar and mix all together. This will make about 6 chickens! Store in a dark place for later use.
-
3This is quick and easy! Take giblets from the inside of chicken (freeze for later use), and wash the chicken all over and dry with paper towels. Place olive oil all over chicken. Rub the chicken with the CHICKEN BEER RUB, don't be gentle with the rub. Place chicken in the refrigerator for about 6 hours, or, overnight.
-
4Remove the chicken from the refrigerator. Get a pan or glass ovenproof 9x11 dish. Pour about 1/2 of the can of beer in the bowl. Take and put about 1/2 teaspoon of chicken rub inside of can. Take the chicken and place, bottom of chicken over the beer can and slide down and place the legs in front of the chicken. You want the chicken to stand up and not leaning. (If you have a beer can stand, use it.) Place in the dish with the beer. Where you put the chicken onto the can, you will have to put more rub on the chicken to may sure it's all covered with rub.
-
5Let chicken stand for about 1/2 to 1 hours.
-
6Meanwhile, take the oven rack, and place on the bottom holes of the oven. This way you want have the chicken touching anything in the oven.
-
7Turn the oven to 350 degrees!
-
8Place chicken into the preheated oven. (I used a thermometer inserted in the thigh of the chicken.) Once the chicken temperature gets to 165 degrees, about 1-1/2 hours. Pull out the chicken and put a foil tent over it for about 10 minutes.
-
9I had baked beans, rice w/peas and garlic bread --- ENJOY!!!
