This is the best tasting little chicken bites in the best BBQ sauce ever. I always made my chicken like this; but just came across this sauce while at my mom's this summer in one of her old notebooks of handwritten recipes. She couldn't remember where she got it- I think it was from her friend Opal, in Florida. Hope you like it too!

Ingredients For bbq chicken made in the kitchen

  • CHICKEN PREP:
  • 4 lg
    skinless,boneless chicken breasts, cut into bite size pieces
  • 1 qt
    dairy buttermilk
  • 1 sm
    onion, quartered not diced
  • 1/2 tsp
    each salt and pepper
  • 1 tsp
    paprika, sweet mild
  • 1 tsp
    onion powder
  • 2 tsp
    garlic powder
  • 2 tsp
    lawry's seasoned salt
  • 2 c
    all purpose flour
  • canola oil for frying
  • BBQ SAUCE:
  • 12 oz
    bottle of heinz sweet chili sauce
  • 1 c
    water
  • 3/4 c
    karo corn syrup, light
  • 1/2 c
    white wine vinegar
  • 1/2 c
    brown sugar, lightly packed
  • 1/4 c
    honey
  • 1/4 c
    molasses
  • 1 tsp
    liquid smoke
  • 2 tsp
    each lawry's seasoned salt and ground mustard
  • 1 Tbsp
    dehydrated minced onion
  • 1 tsp
    garlic powder with parsley
  • 1/4 tsp
    pepper
  • Directions
    bring all ingredients to a boil in a medium saucepan over medium-high heat. stir continuously until mixture comes to a boil. turn down heat to medium-low and simmer for 45 minutes or until thickened to suit you. should be quite thick.

    Chicken: Soak overnight in the following- In a large bowl, mix buttermilk,quartered onion,salt and pepper and mix well. Add prepared chicken pieces to buttermilk mixture until fully covered by the mixture. Chill in this mixture overnight.

    Next day: In a shallow pie pan, mix the flour, paprika, seasoned salt,garlic and onion powder;blend well. Heat an electric skillet to 375^with enough canola oil about 1/2 inch deep.( or using a regular heavy skillet over medium heat).

    When oil is hot, dredge each piece of chicken in flour mixture then drop carefully into the hot oil. Fry on all sides(about 10 minutes) until browned and cooked through. Remove pieces from skillet to a platter with paper towels to drain. Then dredge chicken in the BBQ sauce, coating each piece evenly;place on platter and serve with your favorite dressing for dipping. I like Original Ranch Dip.

    Sauce is great for meatballs too! Or to use on chicken, ribs, steaks etc, on outdoor grilling. I've even used it on top of my meat loaf.
