Ingredients For basil lemongrass curry

4 stalklemongrass white parts only chopped

1/2 cfresh basil

2 smshallots chopped

4 clovegarlic

1 Tbspbrown sugar

1/2 tspground turmeric, coriander, cumin, and salt

1 tspred pepper flakes

32 ozcoconut milk

4boneless skinless chicken cut into pieces

1 ccarrots cut into matchsticks

1 cshredded cabbage

6scallions chopped

fresh basil

rice for serving

1inch piece of ginger
How To Make basil lemongrass curry

1Add the lemongrass, basil, shallots, ginger, garlic, coriander, cumin, turmeric, salt, red pepper flakes and brown sugar. Add 1 tbsp water. Process into a paste.

2Over medium heat add some oil and once the oil is hot add the paste and let cook 1 minute. Then add the coconut milk. Cook and let reduce for 15 minutes. Add the chicken pieces in and cook 5 minutes.

3Pour the curry over the rice and top with carrots, cabbage, basil, and scallions.
