The original recipe was more of a soup. A broth, with potatoes. It was okay, but we prefer more of a hearty, stick to your ribs meal. I think this qualifies. This recipe makes a large batch, you can adjust the amounts if you like.

Ingredients For barb's easy chicken curry

2 1/2 lbboneless skinless chicken breasts, but into bite sized pieces

2 Tbspgarlic powder

1/2 tspginger

1/2 tspcumin
-
1 pkg.70 oz. curry powder

1 canstewed tomatoes with juice

3 canfrench onion soup
-
3 cminute rice
How To Make barb's easy chicken curry

1Brown cup up chicken until no longer pink. Push chicken to sides of pan. Add all spices. Mix well and coat the chicken with the spices. Add soup and tomatoes. Let simmer for 10-15 minutes, or longer if you like. turn off heat. Add rice. , stir to combine. Cover. Let stand five minutes. Stir. Cover and let stand for another five minutes. Stir and enjoy.
