1chicken, quartered broiler-fryer

plain yogurt

1/4 tsppepper

6 oztomato paste

1 cchicken broth

1/2 tspoil

1.5 tspsalt

1.75 corzo pasta

1 Tbspbutter

1/3 cwater
How To Make baked chicken with orzo

1Place the chicken in a shallow roasting pan, skin side up. Add 1/3 cup water.

2Dot with butter. Salt and pepper to taste.

3Bake in 350 oven 1 hour.

4Fifteen minutes before chicken is done, bring 2 quarts of water to boil, stir in orzo, 1/2 teaspoon salt and oil.

5Parboil 5 minutes. Drain orzo in colander.

6Rinse in cold water.

7Drain.

8Remove baked chicken from oven. Place in dish.

9Cover tightly with heavy-duty foil.

10Set aside.

11Turn oven to 425. Add 1 cup water and broth to roasting pan.

12Stir to loosen drippings.

13Add tomato paste, 1 teaspoon salt, pepper and drained orzo.

14Bake 30 minutes or until orzo has absorbed liquid and is tender. Adjust salt.

15Sprinkle orzo with parmesan cheese or dollops of yogurt. Serve with baked chicken.
