This bacon-wrapped chicken breast is an impressive and delicious dinner. Once baked, the chicken breast is moist and filled with a delicious smoky flavor. There is a hint of spice from the pepper jack cheese and jalapeno pepper. If you like your bacon on the crispier side as we do, partially cook the bacon before wrapping it on the chicken. That gives the bacon a little crunch to contrast with the juicy chicken.

    boneless skinless chicken breast
  • 8 slice
    bacon
  • 4
    halved pickled jalapenos
  • 4 slice
    pepper jack cheese
  • salt and pepper, to taste

Depending on the thickness of your chicken breast, we suggest baking for 35 - 45 minutes.
  • Bacon with a slice of pepper jack cheese and pickled jalapeno pepper on top.

    Rinse chicken. Lay bacon out 2 slices together. Top with a slice of cheese and then the pickled jalapeno pepper.
  • Bacon wrapped around chicken breast and secured.

    Place chicken on top. Fold the bacon over and secure it with toothpicks.
  • Chicken placed in a baking dish bacon seam side down.
