awesome baked chicken scampi
I’ve been playing around with this for a bit of time, and finally came up with this recipe. I’ve seen chicken scampi recipes that use a cream-based sauce, and/or combine the chicken with veggies (like carrots, etc), and although I’m sure that it’s quite tasty… it’s not scampi. Scampi is an oil, wine, lemon-based sauce. I like to think of mine as a combination of the best elements of scampi and piccata. So, you ready… Let’s get into the kitchen.

Ingredients For awesome baked chicken scampi
- PLAN/PURCHASE

1/2 lbchicken breast, boneless, skinless, cut into bite-sized pieces
- THE MARINADE

3 Tbspolive oil, extra virgin
-
3 Tbspwine, dry white (pinot grigio, sauvignon blanc, chardonnay)

1 Tbsplemon juice, freshly squeezed
-
1 pinchsalt, kosher variety
-
1 pinchblack pepper, freshly ground
- THE SAUCE
-
2 Tbspyellow onion, finely diced
-
1 clovegarlic, minced
-
5 Tbspsweet butter, unsalted
-
2 Tbspolive oil, extra virgin
-
1 pinchcrushed red pepper flakes
-
2 Tbspwine, dry white
-
2 Tbsplemon juice, freshly squeezed
-
1/8 tspsalt, kosher variety
-
1/8 tspblack pepper, freshly ground
-
1/4 cpanko breadcrumbs
How To Make awesome baked chicken scampi

1PREP/PREPARE

2THE MARINADE
-
3Gather and prep all your ingredients.

4Add all of the marinade ingredients to a bowl or Ziploc bag, and mix thoroughly.

5Add the chicken and then mix to coat.

6Place the chicken into the refrigerator, and allow it to marinate for two hours, but no longer than six.

7THE SAUCE

8Gather and prep all your ingredients.

9Add all of the sauce ingredients, except the panko breadcrumbs to a small saucepan, over medium heat.

10Allow to simmer for 5 minutes.

11Take off the heat and stir in the panko breadcrumbs.

12Place a rack in the middle position, and preheat the oven to 400f (205c).

13Remove the chicken from the marinade, and divide between two ovenproof dishes.

14Divide the sauce between the two dishes

15Place in the preheated oven, and bake for 30 minutes, or until the sauce is bubbling and the chicken begins to brown.

17Sprinkle a bit of Parmesan over the top, and serve with some fresh pasta. Enjoy.
