This is my son Austin's favorite recipe....It's different than your ordinary chicken cordon bleu.

Ingredients For auntie peggy's chicken cordon bleu

  • 4 md
    boneless chicken breast
  • 12
    broccoli florets
  • 8 slice
    swiss cheese
  • 8 slice
    ham
  • 1 1/2 c
    bread crumbs
  • 1 c
    white zinfandel wine
  • 12 slice
    butter, cold

How To Make auntie peggy's chicken cordon bleu

    pre-heat oven 350 degrees. Spray 9 x 13 glass baking dish with non-stick cooking spray.

    put thawed chicken breast in large zip lock bag - 1 piece at a time. Beat with rolling pin to flatten chicken to 1/4 " thickness. Remove chicken from bag. Lay out on a tray

    Take 2 slices of cheese, 2 slices of ham, 3 broccoli florettes (in this order) and lay on each chicken breast. Sprinkle a little bread crumbs ontop and roll up, with seam side down, put in baking dish.

    Pour the cup of wine in with the chicken. Sprinkle the remaining bread crumbs ontop of all of the chicken and place 3 pats of butter ontop of each chicken breast. Bake in oven for 45 min to 1 hour.
