1 lbboneless, skinless chicken thighs, cut into 1"-pieces

18 oz bag shredded carrot

1 Tbsplite soy sauce

1/2 tspground ginger

1 Tbsprice wine vinegar

1 cwater
-
1/4 tsppepper
-
314 oz cans reduced-sodium chicken broth
-
2 ozdry vermicelli pasta

16 oz bag frozen pea pods, thawed, halved diagonally.

How To Make asian style chicken noodle soup w/ ginger

1In a 6-quart slow-cooker, combine chicken, carrots, 1 tbsp soy sauce, vinegar, ginger and pepper. Stir in broth & water. Cover and cook on high for 3 hrs. Stir in vermicelli pasta and pea pods. Cover, cook another 12-15 min, or until pasta is cooked through. Serve w/ additional soy sauce.
