Quesadillas are a quick and easy dinner to throw together. We loved the combination of chicken, cheese, peppers, and avocados. They create a hearty and flavorful quesadilla. It's spicy with the creaminess of the cheese and avocado inside a crisp tortilla. There are two versions of the quesadilla in the instructions. If you like spice and want to be adventurous, try the sweet and spicy pepper jelly and cream cheese instead of the cilantro mayo.

Ingredients For as you like it peppery quesadilla

  • 1 pkg
    sliced pepper jack cheese
  • 1 pkg
    Monterey Jack cheese
  • 1
    fresh jalapeno, diced
  • 2 md
    avocados
  • 1/2 c
    mayonnaise
  • 1 bunch
    cilantro, chopped
  • extra virgin olive oil
  • 2 pkg
    flour tortillas
  • 1 pkg
    cooked chicken pieces
  • 1 jar
    medium salsa, for serving
  • 8 oz
    sour cream, for serving
  • ALTERNATE QUESADILLA INGREDIENTS
  • 1 jar
    hot pepper jelly
  • whipped cream cheese

How To Make as you like it peppery quesadilla

  • Prepare the jalapenos, cheese, and avocado.

    Cut or shred the Monterey Jack cheese. Cut pepper jack cheese into thin slices. Peel and slice avocados.
  • Chop cilantro and mix with the mayonnaise.

  • Heat oil in a skillet.

    Heat enough oil to cover the bottom of the skillet.
  • Spread mayo on the tortilla.

  • Place tortilla in the skillet and top with pepper jack cheese.

    Place the mayonnaise side up in the skillet. Arrange slices of pepper jack cheese on top of the mayo.
  • Top with chicken, jalapeno, and avocado.

  • Fold over and brown each side.
