I am half Puerto Rican and half Colombian, I have mixed both of my cultures to make an exquisite dish called Rice and Chicken. It is wonderful if you cook a Puerto Rican kidney been stew over it as well for change.

Ingredients For arroz con pollo

2 Tbspolive oil

1/2 mdonion, vidalia, peeled

1/2 mdgreen pepper

3/4 bunchcilantro, fresh

2 tspsofrito

1/2 tspminced garlic

1/2 cantomatoe sauce

1 Tbspadobo powder
-
2 pkgsazon seasoning packs

1 cancorn
-
2 crice
-
4 cwater
-
1 tspsalt
-
1 tspblack pepper

2 lgchicken breast halves, skinless and boneless
How To Make arroz con pollo

1Pour over 2 table spoons of olive oil into a medium pot over medium high heat, put 1/2 diced onion, 1/2 diced green peeper, 1 tbsp. of adobo, 2 packages of sazon seasoning packs, 1/2 tsp. on minced garlic, 1/2 small can of tomatoe sauce and seer until you can smell the vegetables cooking.

2Cut chicken breast into small cubes and add to vegetables to seer.

3Once vegetables and chicken are well seared, you add 2 cups of rice and 4 cups of water, add 1 tsp. salt or to taste 1 tsp. black pepper to taste.

4Stirring it very well, bring to a boil for 2 to 3 minutes then cover for 27 minutes, open stir and cover let sit for about 5 minutes, then serve.
