This is a Cantonese recipe from a Chinese cooking course that I took in Chinatown 45 years ago. Don't let the long list of ingredients put you off. Once the ingredients are prepped the cooking is very fast and easy. My family was very fond of my Chinese dishes. Check out my recipe for Chow Mien. If you prep the vegetables the night before, you will have a very fast dinner when you get home from work.

Stir-Fry
Ingredients For almond guy ding

1-1 1/2boned and diced chicken breasts

2 stalkcelery, diced

1 mdcooking onion, diced
-
1-1 1/2 cfrozen or fresh peas
-
1/2 ctoasted almonds or cashews (unsalted)

3/4 cbamboo shoots, diced
-
1/2 cwater chestnuts, diced (about 10)

4-5chinese mushrooms or 3/4 c. fresh mushrooms, diced

1 Tbspsherry (optional)
-
1 tspsalt
-
1/4 tspsugar
-
1/2 tspsoy sauce
-
1 Tbspoyster sauce
-
1/2 - 1 cchicken stock
-
cornstarch to thicken
-
1 clovegarlic
-
1 sliceginger root
How To Make almond guy ding

1Prepare all ingredients before starting to cook.

2Heat wok (or large frying pan) on high heat - add oil. Add garlic and ginger. When the wok starts to smoke put in meat. Stir until white and remove from pan.

3Stir-fry in order: onion, celery, peas, mushrooms, seasonings and soy.

4Add cornstarch to a bit of water. Add chicken back to stir-fried vegetables and mix. Add chicken stock, cornstarch mixture and stir until thick.

5Add nuts and a squirt of oil. Serve. I like to serve over rice.
