3 casseroles for the freezer

My friend just had surgery on her right arm - and she also has 5 children all under 11 years old! So I decided to fix her some casseroles that her kids can heat up in the microwave. These are easy to make and reheat well. I used the Chinette one-time-use baking containers so she would not have to return dishes.

Ingredients For 3 casseroles for the freezer
- CHICKEN POT PIE

3 ccooked chicken

1 smpackage frozen vegetables

2 jarchicken gravy (or make your own)

1 ccream

1 tubecrescent rolls
- TACO CASSEROLE

1 cancorn kernels, drained well

1 canblack or pinto beans, drained well

1 1/2 lbground meat
-
1 cantomatoes with green chilies

2 pkggoya seasoning mix

1 Tbspchili powder
-
2 cshredded cheddar cheese
-
2/3 ccrushed fritos corn chips
- PIZZA CASSEROLE

4-5 ccooked pasta (macaroni or spaghetti works well)

1 jarfavorite pasta sauce (or 3 1/2 cups homemade)

1 1/2 lbcooked and crumbled beef or sausage

2 or more cchopped onions, green peppers, and mushrooms
-
2 cshredded mozzarella cheese
-
1/4 cgrated parmesan cheese
-
3 ozsliced pepperoni
How To Make 3 casseroles for the freezer

1Chicken Pot Pie Layer: chicken, vegetables, salt/pepper, cream-gravy blend in a 3 quart casserole or 9x13 dish. Cover with Crescent rolls. Bake 375° for 35-40 minutes. Cool, cover well, freeze.

2Taco Casserole Layer: Corn kernels, beans, taco meat mixture*, 1½ cups shredded cheese. Bake 375° for 20 minutes. Add topping*, bake 10-15 minutes more. Cool, cover well, freeze. *Taco meat mixture: 1½ pounds browned ground meat, 1 can tomatoes/green chilies, 2 packets Goya seasoning mix, 1 tablespoon chili powder. Simmer until sauce is thickened. *Topping: 2/3 cup crushed Fritos, ½ cup shredded cheese.

3Pizza Casserole Layer: cooked pasta, seasoned tomato sauce - use a little fresh garlic and dried oregano, crumbled browned sausage, onions, peppers, mushrooms. Bake 375° for 20 minutes. Top with shredded mozzarella, grated Parmesan, and sliced pepperoni. Continue baking for 10-15 minutes longer, until cheese is melted and bubbly. Cool, cover well, freeze.

4Reheating Instructions Oven: Cover casserole with foil and bake at 350° until center registers 160°. Microwave: Cover with waxed paper or plastic wrap, vent. Heat on medium to medium-high power (50%-70%) for 5-10 minutes, or until center is hot.
