This is from a Weight Watchers recipe, but I bumped up the spice and heat level in here if low fat cheese is used there are 6 points per serving.

Ingredients For tamale pot pies with turkey and pepper jack

1 1/4 lbground turkey or chicken

1 lgonion, chopped

10 ozcan diced tomatoes with green chilis

8 ozcan tomato sauce

1 cfresh or frozen corn kernels

1 Tbspground cumin
-
3/4 cyellow cornmeal

1/4 tspsalt
-
1 clovegarlic, more if you like

1/2 tsporegano
-
1 tspchili powder
-
3 cwater
-
3 ozshredded fat free pepper jack cheese
How To Make tamale pot pies with turkey and pepper jack

1Preheat oven to 400 degrees. Spray 6- 8 ounce ramekins with non stick spray.

2Spray large non stick skillet with nonstick spray and set over high heat. Add turkey and onion and stir until turkey is no longer pink. Stir in tomatoes, tomato sauce and all the rest of the spices. Simmer 15 minutes to marry flavors.

3Whisk together cornmeal salt and 3/4 cup water in a med bowl. Bring remaining 2 1/4 cups water to a boil in a medium saucepan over high heat. Slowly whisk cornmeal mix into boiling water. Reduce heat and simmer, stirring frequently until thickened, 4-5 minutes.Remove from heat and stir in 1/2 cup jack cheese.

4Remove from heat, divide between ramekins. Spoon cornmeal over tops and bake for 8 minutes. Sprinkle remaining cheese and continue baking until bubbly and cheese melts.
