This is a slightly Mexican version of a squash casserole.

Ingredients For squash casserole

  • 8 oz
    pork sausage
  • 3 sm
    zucchini, sliced
  • 1 md
    onion, thinly chopped
  • 2 Tbsp
    butter, melted
  • 2 can
    cream-style corn (8 3/4 oz)
  • 2 c
    shredded Monterrey jack cheese
  • 1 can
    chopped green chiles, drained (4 oz)

How To Make squash casserole

  • 1
    Brown the sausage in a large skillet, stirring until it crumbles. Drain well, and set aside.

    Saute the zucchini and onions in butter in skillet over medium heat until tender.

    Combine the zucchini mixture, reserved sausage, corn, cheese, and chiles; stir well. Spoon into a lightly greased 2-quart casserole dish.

    Bake, uncovered, at 350 degrees F for 35 to 40 minutes or until golden.
