This is a slightly Mexican version of a squash casserole.

Ingredients For squash casserole

8 ozpork sausage

3 smzucchini, sliced

1 mdonion, thinly chopped

2 Tbspbutter, melted

2 cancream-style corn (8 3/4 oz)

2 cshredded Monterrey jack cheese

1 canchopped green chiles, drained (4 oz)
How To Make squash casserole

1Brown the sausage in a large skillet, stirring until it crumbles. Drain well, and set aside.

2Saute the zucchini and onions in butter in skillet over medium heat until tender.

3Combine the zucchini mixture, reserved sausage, corn, cheese, and chiles; stir well. Spoon into a lightly greased 2-quart casserole dish.

4Bake, uncovered, at 350 degrees F for 35 to 40 minutes or until golden.
