1 1/2 Tbspolive oil

2 lgskinless, boneless chicken breasts, cubed

ground Himalayan pink salt, to taste and divided

freshly ground black pepper (I always use mixed peppercorns), to taste and divided

1 Tbspbutter
-
1 cchopped yellow onions
-
1/2 cchopped celery
-
1/2 cchopped red peppers
-
1/2 cchopped poblano peppers
-
2 lgcloves garlic, minced
-
3 Tbspunbleached all-purpose flour
-
1/2 clow-sodium chicken broth
-
1 1/2 cheavy cream
-
1 TbspOld El Paso taco seasoning
-
1/2 Tbspground cumin
-
1 tspsmoked paprika
-
1 tspdried thyme leaves
-
1 lbgreen beans, ends trimmed and blanched
-
2 ctortilla chips, broken into smaller pieces
-
2 csharp cheddar cheese, grated
How To Make southwest chicken & green bean casserole

1Preheat oven to 350 degrees F and lightly grease a 9 x 13-inch baking dish; set aside.

2In a large skillet over medium heat, add oil. When hot, add chicken cubes; season with salt and black pepper. Sauté until no longer pink, about 4 minutes.

3Using a slotted spoon, transfer the cubes to a bowl and set aside.

4Melt butter in the skillet before adding onions and celery; season with salt. Sauté for 2 minutes.

5Add red and poblano peppers; sauté for 2 minutes.

6Add garlic and sauté for just 1 minute.

7Coat the ingredients with flour and cook for 1:30 minutes. Pour in broth and stir constantly until the mixture thickens and becomes pasty.

8Add heavy cream and seasonings; mix well. Add blanched green beans and return chicken with any accumulated juices. Stir to combine.

9Pour the mixture into the prepared baking dish. Top with tortilla chips and grated cheese.

10Cover with foil lightly greased and transfer to the preheated oven; bake for 15 minutes.

11Uncover and bake until the cheese is melted and the top is golden brown, about 10 minutes.

12Remove from the heat and let it rest for 10 to 15 minutes before serving.
