I consider this a comfort food meal. The ground beef and onion, garlic, and carrot mixture really add a lot of flavor to this rice skillet meal. The cream of mushroom soup and diced tomatoes had a bit of taste and color. This meal goes pretty quickly in my household.

Ingredients For skillet hamburger and rice dinner

  • 1 lb
    ground beef
  • 1 md
    yellow onion, chopped
  • 1 Tbsp
    garlic, minced
  • 1 c
    diced carrots
  • 1 can
    condensed cream of soup (10 oz)
  • 1 c
    dry jasmine rice
  • 2 1/2 c
    low-sodium beef broth or stock
  • 1 can
    diced tomatoes, undrained (15 oz)
  • 1 tsp
    dry oregano
  • 2 tsp
    paprika
  • 1 c
    shredded cheese

How To Make skillet hamburger and rice dinner

    In a large deep nonstick skillet on medium-high heat, brown beef.

    Add in onions and garlic and dice carrots. Add in salt and pepper as needed for taste.

    Add in Jasmine rice then add in cream of mushroom soup and diced tomatoes with juices. Stir to combine everything.

    Place a lid on it and let it simmer for 15 minutes or so until all the liquid is absorbed into the rice. Once all the liquid is absorbed, turn off the heat and sprinkle on the cheese. Replace the lid on the skillet until the cheese has melted.

    Serve with fruit salad or garden salad. enjoy!
