I have made this recipe a few times. It is quite tasty and something a little different. I found this recipe on the back of a box of Carnation Instant Potatoes. I had almost forgotten that I had it. Now that I found it in an old recipe box I will certainly make it again. It's a meal in one.

Ingredients For salmon potatoe casserole

1/3 cup chopped onion

2 tbsp of butter or margerine

1 (10 oz.) can cream of mushroom or cream of celery soup

1/2 cup of milk
-
2 (7 3/4 oz) cans of drained flaked salmon

2 cups of cooked, drained peas
-
2 tsp lemon juice
-
4 serving recipe carnation instant mashed potatoes

How To Make salmon potatoe casserole

1Saute onions in butter until tender

2Blend in soup and milk
-
3Stir in salmon, peas and lemon juice
-
4Divide mixture into four- 2 cup individual casserole or custard cups

5Make the 4 serving recipe for the instant mashed potatoes according to package directions. Spoon the prepared potatoes in a ring around the edge of each casserole

6Sprinkle the tops with paprika

7Bake in moderate oven (350F) for 20 to 25 minutes or until hot

8Makes 4 servings

92 (6.5 oz.) cans drained flaked tuna can be substituted for the salmon
