I created this new chicken fries casserole recipe. It's in the style of nachos, and perfect for making burritos and fajitas.

Ingredients For nacho chicken fries casserole

  • 4 c
    crushed nacho tortilla chips, divided
  • 3/4 c
    sliced black olives
  • 5
    fresh jalapenos, sliced
  • 2 Tbsp
    avocado oil
  • 1 bag
    frozen chicken fries
  • 1 Tbsp
    taco seasoning mix
  • 1 tsp
    garlic powder
  • 1
    packet dry onion soup mix
  • 2 Tbsp
    nacho cheese seasoning
  • 1 c
    heavy cream
  • 2 can
    condensed cheddar cheese soup
  • 8 oz
    cream cheese, softened
  • 1 can
    diced tomatoes and green chilies, drained
  • 8 oz
    sharp cheddar cheese, shredded
  • 2 Tbsp
    chopped fresh cilantro

How To Make nacho chicken fries casserole

    Preheat oven to 375 degrees F.

    Coat the bottom and sides of a 9 x 13 - inch baking dish with cooking spray.

    Add 2 cups crushed nacho tortilla chips, the sliced black olives and the sliced jalapenos; mix well.

    Heat the avocado oil in a medium saucepan over medium heat. Add the chicken fries and saute for 5 minutes or until crispy and browned.

    Stir in the taco seasoning, garlic powder, dry onion soup mix and nacho cheese seasoning. Remove from heat. Set aside.

    In a large bowl, combine the heavy cream, soup, cream cheese and diced tomatoes and green chiles; whisk together for 3 minutes until blended.

    Pour over the chicken fries mixture in the saucepan; mix well.

    Spoon over the prepared baking dish evenly. Sprinkle with shredded sharp cheddar cheese. Top with remaining nacho tortilla chips.

    Bake for 30 minutes or until the cheese is melted. Cool for 10 minutes. Garnish with chopped cilantro on top.
