I had an ex boyfriend many yrs ago who wanted to impress me and came up with this unbelievably delish chicken dish. I was very impressed and went on to make this for others. Children love this!

Ingredients For mikey's pizza chicken

  • 1
    egg, beaten
  • 1 c
    part-skim ricotta cheese
  • 1/2 c
    sliced pepperoni, cut in 1/2
  • 1/2 c
    grated parmesan cheese
  • 1 tsp
    minced garlic
  • 2 Tbsp
    fresh chopped parsley
  • salt and pepper to taste
  • 6
    thin, boneless, skinless chicken breasts
  • 1 c
    favorite marinara sauce
  • 1 c
    shredded mozzarella cheese
  • 1 box
    spaghetti

How To Make mikey's pizza chicken

    Heat oven to 350. Lightly spray a 9" x 13" casserole pan w/ cooking spray. Make pasta as directed, drain and put back in pan. Add a little olive oil and set aside.

    In medium bowl,mix egg, ricotta cheese, a 1/4 cup parmesan cheese, garlic, pepperoni, salt, peppe and 1 tbsp parsley. Mix well.

    Place chicken breasts in bottom of pan and place 2 tbsps of filling on short end of each chicken. Roll each chicken up and place seam side down in pan. Pour marinara sauce over chicken, top w/ mozzarella cheese, the remaining parmesan cheese and parsley. Cover pan w/ foil. Bake 35 mins. Serve over pasta.
