1 mdchorizo (mexican sausage, mild or medium

4whole wheat tortillas

12 ozsalsa, tomato-based

1 ccheddar cheese, shredded

1 coaxaca, shredded

1 cmexican crema
How To Make mexican black bean casserole

1Brown chorizo, add chopped onion, and chopped green pepper until soft.

2Add garlic soften, drain and add black beans and broth, continue cooking for 3 minutes. Add cumin, black pepper, salt, and cilantro, stir to combine.

3Spray bottom of an 8x8 inch casserole dish with non-stick spray. Add a tortilla, 1/4 of the black bean mixture, 1/4 salsa, 1/4 cheddar cheese, continue layering until all ingredients have been used. Top casserole with all remaining cheeses.

4Cover casserole with foil, and bake at 375 degrees for 20 minutes. Remove foil , continue cooking 8-10 minutes. remove from oven and drizzle with the crema.
