This classic, comforting, delicious version of Chicken Divan makes for a simply perfect main dish. The tang from the lemon and mayo and the hint of spice from the curry topped with the crispiness of breadcrumbs that tie this whole dish together. My mother, JoLynn, who I affectionately call Mama Jo, spent many years perfecting and tweaking this recipe while teaching me along the way.

Ingredients For mama jo’s chicken and broccoli casserole

  • 4
    chicken breast halves, skinless and boneless
  • 4 bunch
    broccoli, fresh
  • 2 can
    cream of chicken soup
  • 1 large
    lemon, juiced
  • 1/2 c
    mayonnaise dressing
  • 2 clove
    garlic
  • 4 - 6 tsp
    curry powder
  • 1/4 tsp
    salt
  • 1/2 tsp
    pepper
  • FOR THE TOPPING:
  • 3 c
    panko bread crumbs
  • 1 stick
    butter, melted

How To Make mama jo’s chicken and broccoli casserole

    Salt & pepper chicken breasts, sear in oil or butter until done. Cut into bite-sized cubes.

    Combine the cream of chicken, mayonnaise, curry powder and pepper in blender, pulse a few times until combined. Next, add lemon juice and pulse just until blended. (If you mix it too much with the lemon in it, it can curdle, so make sure it's just until blended.)
  • Vibrant green broccoli stems and seasoned pieces of bite-sized chicken sit mixed together in a metal bowl.

    Scrape out of food processor and into a bowl, in which you have combined the chicken and broccoli (steam the broccoli first). Stir until mixed. Pour into greased casserole dish or individual ramekins, if you'd like.

    Combine melted butter in a bowl with bread crumbs, stir to combine and distribute over the top of casserole. Bake at 375 degrees for about 30 - 40 minutes, or until bubbly and brown.
