macaroni and cheese with caramelized mushrooms

I created this new macaroni and cheese recipe. It's an extreme recipe, adding caramelized mushrooms for the first time ever.

Ingredients For macaroni and cheese with caramelized mushrooms

  • 1 c
    shredded mild cheddar cheese
  • 1 c
    panko bread crumbs, divided
  • 16 oz
    dry elbow macaroni
  • 1 Tbsp
    avocado oil
  • 3/4 c
    dark brown sugar
  • 6
    baby portabello mushrooms, sliced
  • 1 Tbsp
    cajun seasoning
  • 1
    packet dry onion soup mix
  • 2 tsp
    ground black pepper
  • 2 Tbsp
    margarine
  • 1 c
    heavy whipping cream
  • 1 can
    evaporated milk
  • 8 oz
    cream cheese, softened
  • 1 c
    half and half
  • 8 oz
    gouda cheese, shredded and divided
  • 1 c
    cubed processed American cheese
  • 3 Tbsp
    grated Parmesan cheese

How To Make macaroni and cheese with caramelized mushrooms

    Preheat oven to 375 degrees F.

    Coat a 9x13-inch baking dish with cooking spray. Add shredded mild cheddar cheese and 1/2 cup panko bread crumbs; mix well.

    Fill a pot with lightly salted water and bring to a boil. Add macaroni and return to a boil. Cook and occasionally stir until the macaroni has cooked through, but is still firm to the bite, about 8 minutes; drain.

    Heat avocado oil and brown sugar in a large, deep skillet over medium heat. Add sliced portabello mushrooms and saute for 5 minutes until the mushrooms are caramelized.

    Stir in cajun seasoning, dry onion soup mix and black pepper. Remove from heat and set aside.

    Heat margarine in a medium saucepan over medium-low heat. Combine heavy whipping cream, evaporated milk, cream cheese and half and half; whisk together for 4 minutes until blended.

    Stir in 1 cup shredded gouda cheese and cubed American cheese and let it simmer for 5 minutes until the cheeses are melted.

    Add cooked macaroni and caramelized mushroom mixture; mix well until combined. Remove from heat.

    Spoon evenly into the prepared baking dish. Sprinkle with grated Parmesan cheese, remaining shredded gouda cheese and panko bread crumbs.

    Bake for 25 minutes or until golden brown and the cheese is melted.
