macaroni and cheese with barbecue ribs

I had a extreme idea for barbecue beef short ribs - use them on some mac and cheese. So I created this recipe, great for picnics, potlucks and super bowl dinner.

Ingredients For macaroni and cheese with barbecue ribs

4 lbboneless beef short ribs

3 Tbspbarbecue seasoning, divided

1 Tbspsea salt mixed with black pepper

1 Tbspavocado oil

4baby portabello mushrooms, sliced
-
3banana peppers, sliced
-
1 cspicy barbecue sauce, divided
-
1 pkgdry penne pasta
-
1 1/2 ccrispy french fried onions

2 Tbspmargarine
-
1 cheavy cream
-
1 cmilk
-
10 ozsharp cheddar cheese, cubed
-
1 cshredded Monterey jack cheese
-
1 cshredded Parmesan cheese
-
3/4 cdry bread crumbs
How To Make macaroni and cheese with barbecue ribs

1Cut the boneless beef short ribs into 4-inch long pieces. Season with 1 tablespoon barbecue seasoning and sea salt/black pepper.

2Heat avocado oil in a large, deep skillet over medium heat. Add seasoned short rib pieces, sliced portabello mushrooms and banana peppers; saute for 5 minutes until heated through. Add 1/2 cup barbecue sauce and toss to coat. Remove from heat.

3Fill a large saucepan with lightly salted water. Bring to a boil over medium-high heat, stir in penne pasta, and return to a boil. Cook, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 8 minutes. Drain well.

4Transfer to a large bowl and season with 1 tablespoon barbecue seasoning.

5Preheat oven to 350 degrees F.

6Coat a 9x13-inch baking dish with cooking spray. Sprinkle with crispy french fried onions.

7Melt margarine in a large saucepan over medium heat. Add heavy cream, milk and cheeses; whisk well and let it simmer for 7 minutes until the cheeses are melted.

8Add short rib mixture and cooked penne pasta and season with remaining barbecue seasoning; mix together until combined. Remove from heat.

9Pour into a prepared baking dish evenly and sprinkle with bread crumbs.

10Bake for 30 minutes or until bubbly. Let stand for 15 minutes.

11Drizzle with remaining barbecue sauce.
