    olive oil
  • 3
    bell peppers, any color, seeded and sliced
  • 1 lg
    onion, halved and sliced
  • 2 c
    cooked, shredded chicken
  • 1 tsp
    salt
  • 1/2 tsp
    chili powder
  • 1/2 tsp
    cumin
  • 1/4 tsp
    paprika
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    oregano
  • 4 oz
    cream cheese, softened
  • 3/4 c
    shredded cheddar, divided cheese
  • 1/4 c
    sliced black olives
  • 2 Tbsp
    sliced pickled jalapeno peppers
  • 1/2 c
    sliced or shredded pepper jack cheese
  • low-carb flour tortilla or wrap, optional
  • GARNISHES
  • 1/2 c
    sour cream
  • 1 c
    shredded lettuce
  • 1 c
    chopped tomatoes
  • 1 bunch
    chopped fresh cilantro

How To Make low carb oven chicken fajitas

    Preheat oven to 350 degrees F and coat an 8x8-inch baking pan with half of the olive oil.

    Add the other half of the olive oil to a skillet and cook the peppers and onions on medium high, stirring, until limp. Add the chicken, salt, and spices. Stir.

    Add the cream cheese and 1/2 cup of the shredded cheddar cheese. Top with the olives and jalapenos. Cover with the remaining cheese.

    Bake, uncovered, 25 minutes, until golden. Serve on a plate with garnishes or place a spoonful in a low-carb flour tortilla or wrap.
