3/4 chalf and half

3/4 cmilk

2large eggs

2 boxcornbread mix

2 ccrushed barbecue potato chips, divided

2fresh jalapenos, chopped
-
1 cshredded Monterey jack cheese

2 lbground beef
-
1 lgvidalia sweet onion, peeled and chopped

2banana peppers, sliced
-
1 Tbspsteak seasoning
-
1 tspgarlic powder
-
2 tspcrushed red pepper flakes
-
1 Tbspcajun seasoning
-
1 jarsliced mushrooms, drained
-
1 canwhole kernel corn, drained

3 tspcreole mustard
-
3/4 chot and spicy barbecue sauce

1 Tbspdark brown sugar
How To Make louisiana cowboy cornbread casserole

1Preheat oven to 400 degrees F.

2In a large bowl, whisk the sour cream, half and half, milk and eggs together until smooth.

3Add the cornbread mixes and stir to combine. Add 1 cup crushed barbecue potato chips, chopped jalapenos and shredded Monterey jack cheese and stir to incorporate.

4In a large skillet, brown the ground beef over medium heat. Cook, stirring frequently, for 5 minutes until the beef is fully cooked and drain off excess grease.

5Add the diced vidalia onion and sliced banana peppers to the beef and continue cooking for 3 minutes or until the onion and peppers are tender. Season with steak seasoning, garlic powder, red pepper flakes, and cajun seasoning.

6Add the sliced mushrooms, whole kernel corn, creole mustard, barbecue sauce, and brown sugar to the beef mixture and continue cooking for another 5 minutes. Remove from heat and set aside.

7Spoon the beef mixture to a greased 9x13 baking dish and smooth out into an even layer.

8Pour the cornbread mixture over the beef mixture and carefully spread into an even layer. Sprinkle with remaining barbecue potato chips and lightly press them in.

9Bake for 30 minutes. Cool completely.
