This is a good chicken casserole recipe, loaded with angel hair pasta, bacon, mushrooms, banana peppers and cheeses.

Ingredients For loaded baked chicken casserole

  • 1 c
    cubed processed American cheese
  • 9
    butter round crackers, crushed
  • 1 pkg
    angel hair pasta
  • 2 Tbsp
    avocado oil
  • 6 c
    sliced rotisserie chicken
  • 3
    fresh white mushrooms
  • 1
    medium carrot, chopped
  • 1 Tbsp
    chicken seasoning
  • 2 tsp
    ground cumin
  • 1 Tbsp
    sea salt mixed with black pepper
  • 3
    banana peppers, sliced
  • 1 c
    crumbled cooked bacon
  • 3/4 c
    Italian salad dressing
  • 1
    packet dry onion soup mix
  • margarine
  • 1 c
    heavy cream
  • 3/4 c
    half and half
  • 8 oz
    cream cheese, softened
  • 3
    garlic cloves, minced
  • 1 c
    shredded Mexican cheese blend
  • 3/4 c
    grated Parmesan cheese

How To Make loaded baked chicken casserole

    Preheat oven to 350 degrees F.

    Coat a 9-inch baking dish with cooking spray. Add cubed processed American cheese and crushed butter crackers; mix well with a spoon.

    Cook angel hair pasta according to package directions; drain.

    Heat oil in a medium saucepan over medium heat. Add sliced rotisserie chicken, sliced white mushrooms and chopped carrots, cook and saute for 6 minutes or until are tender. Stir in chicken seasoning, cumin and sea salt/black pepper. Remove from heat.

    In a medium bowl, combine sliced banana peppers, crumbled bacon, Italian salad dressing and onion soup mix; stir well for 2 minutes until blended.

    Melt margarine in large saucepan over medium heat. Combine heavy cream, half and half, cream cheese and minced garlic; mix well and let it simmer for 5 minutes.

    Add sauteed chicken mixture, cooked angel hair pasta and banana pepper mixture; stir together until combined.

    Transfer to a prepared baking dish. Sprinkle with shredded mexican cheese blend and grated Parmesan cheese.

    Bake for 25 minutes or until the cheese is melted.
