kitchen camping beef rolls
The recipe was the result of my move to a small condo. I had moved the contents of my freezer to the new place and the beef was part of the move. I am camping out among many boxes that cannot be unpacked until some work on the condo is done. Most of my cooking utensils are packed away somewhere. I really wanted to cook something good but my supplies are very limited. The beef rolls are the result of me using what is available. I really like the result.

Ingredients For kitchen camping beef rolls

1/2 cfinely chopped onion

1/3 cgrated carrot

1/3 ccelery, chopped

1/2 cchopped mushrooms

1 tspchopped garlic

1 ccooked rice
-
dashworcestershire sauce
-
dashhot pepper sauce (optional)

1 lbthinly sliced beef (rouladen)

2 Tbspbacon fat or mixture of butter and oil

1 cbroth or stock
How To Make kitchen camping beef rolls

1Put fat in large sauce pan over low-medium heat. Add the onion, carrot, celery and mushrooms just to sweat them. Do not cook completely. Add the rest of the ingredients and stir to combine. Taste for seasoning and add salt and pepper if necessary.

2Open the meat roll and top with 1/2 c. of the rice/vegetable mixture. Spread evenly along the length of the centre of the meat.

3Start rolling from the wide end, enclosing the filling as best you can.

4Spray a casserole dish with no-stick spray. Place the rolls in the dish and add 1 cup of stock or broth to the dish. Salt and pepper the rolls lightly.

5Cover the casserole and place in 325 degree oven. Bake for 1 hour or until tender.

6Use the fluid from the casserole to make mushroom gravy.

7Slice rolls and serve with mushroom gravy.
