kielbasa & potato casserole (slow cooker)
An easy and very tasty casserole! I used my 6 quart slow cooker for this, but 4 quart or larger will work fine.

Ingredients For kielbasa & potato casserole (slow cooker)

1 kgpotatoes, cubed, fresh or frozen, (2 lb)

500 gkielbasa, or any smoked sausage, sliced into 1/2 to 3/4 inch rounds, (1 lb)

3 ccheddar cheese, shredded, divided
-
1 cancondensed cream of chicken soup

1 conion, diced
-
1 tspgarlic powder
-
1/2 csour cream
How To Make kielbasa & potato casserole (slow cooker)

1For the potatoes, if using frozen, thaw first. If using fresh, peel, then dice to about ½ inch cubes. Add potatoes to the slow cooker. I dice fresh by cutting first with a French fry cutter then use a knife to cut the fries into cubes.

2Add sausage, onion, garlic powder, and 2 cups of the cheese to your slow cooker.

3Mix together.

4Add the soup to the slow cooker and mix into the potato mixture.

5Cover and set to Low and cook for 3 to 4 hours. Check at 3 hours for fork tender potatoes. If not tender, check again at 3½ hours to 4 hours. Slow cookers are all different, some run hotter, some not quite as hot so the time may vary from what I state here.

6When potatoes are tender, add the sour cream and stir in.

7Top with the remaining 1 cup of cheese, cover and continue cooking. If you like cheese, feel free to add more on the top.

8When the cheese is melted, the casserole is ready.
