kielbasa lazy pierogi
I’m sure a lot of you have had lazy pierogi. This is more of a lazy pierogi with kielbasa. I took my mother's recipe years ago and added my own spin on it. I have been making it this way for the last 35 years. My dish has been brought to many potluck dinners. It has even been served as a side dish at BBQs. I have had many compliments on it. The recipe has been given to many friends through the years per request. It is delicious comfort food. I hope you all enjoy my version.

Member's Choice We fell in love at first bite with Nor's version of lazy pierogi. The noodles are soft and buttery. Soaking the sauerkraut in water does help cut back on its naturally strong flavor. Kielbasa pairs nicely with this easy to prepare dish adding a smoky, savory flavor. So good, we think this recipe will make it into your regular dinner rotation.
Ingredients For kielbasa lazy pierogi

1 1/2 cchopped onion

1-2 lblarge kielbasa about 1 1/2-2 lbs (I used Blue Seal)

16 ozgood quality sauerkraut use fresh bagged in refrigerator section of store

16 ozegg noodles

1/2 cbutter
-
3/4-1 tspsalt

black pepper, to taste
-
2/3 cParmesan cheese (I use fresh grated Parmesan Reggiano)

1-2 pinchpoppy seeds, optional
How To Make kielbasa lazy pierogi

1Place sauerkraut in a colander. rinse sauerkraut well to get rid of some of the bitterness. Press on sauerkraut to remove some of the water.

2Cook chopped onion with a little bit of the butter until golden in color. Set aside.

3Place kielbasa in a Dutch oven.

4Fill with water until kielbasa is covered. Boil kielbasa until heated through. About 5-10 minutes after the water starts to boil.

5Remove kielbasa to a platter. Slice kielbasa. Cut each slice in half. You can cut them into quarters if you wish. I usually cut each slice in half.

6Bring water to a boil for egg noodles. Cook per directions on the bag. Drain noodles. Place noodles back into the large pot.

7Place burner on low heat. Fold remaining butter into noodles until melted. Add cooked onions, Parmesan cheese, salt, and pepper, Mix well and set aside.

8Add sauerkraut and kielbasa to noodles. Stir well over medium heat until hot. Sprinkle with poppy seeds if desired. Salt and pepper to taste. Serve as a main dish or side dish.
