I remember my Mom making this "hot salad" when her card club would come over. It's one of those food memories I felt the need to revisit.

Ingredients For hot chicken salad

4 ccooked chicken breast

2 Tbsplemon juice

3/4 cmayonnaise

1/2 tspsalt

2 ozpimento, diced

2 ccelery, diced

4hard boiled eggs, sliced

3/4 ccream of chicken soup

2 tsponion, finely minced

1 ccheddar cheese, shredded

1 cpanko bread crumbs

3 Tbspbutter melted

2/3 calmonds, browned and chopped
How To Make hot chicken salad

1Combine chicken, lemon juice mayonnaise, salt, cheese, celery, hard cooked eggs, pimentos, soup and onion.

2Pour above ingredients in a buttered baking dish (9" x 13"). Refrigerate overnight.

3Add melted butter to Panko crumbs.

4Before baking top with buttered Panko and almonds

5Bake 375° for 25 - 30minutes
