Hands down my family's favourite casserole. Quick and easy to make with excellent results, this is a true comfort dish utilizing that leftover ham.

Ingredients For herbs de provence - potato and ham casserole

2 cwhite potatoes, peeled, thinly sliced

1 smsweet onion, coarsely chopped

1/3 ccanned small mushrooms, sliced

1/3 cfrozen baby peas

2cooked ham, coarsely sliced

1 1/2 Tbspbutter
-
1 1/2 Tbspflour
-
1/2 c2% milk
-
1/4 cheavy cream
-
1 tspcourse Dijon mustard
-
1/2 - 1 tspsea salt
-
1/2 tspfreshly ground pepper
-
1 tspHerbs de Provence, good quality
-
1 cshredded extra aged cheddar or stilton
-
shredded cheese and chopped parsley, to garnish
How To Make herbs de provence - potato and ham casserole

1Preheat oven to 350 degrees F. Combine the vegetables, ham, and frozen peas and put aside until required.

2In a small sauce pan, melt the butter. Whisk in the flour; slowly add the milk and the heavy cream.

3Add the mustard, salt, pepper and Herbs de Provence. Cook on medium heat, stirring until smooth and boiling. Lower the heat and add the cheese, mixing until melted. Remove from heat and set aside until required.

4Assemble: Put the potatoes, onions, peas, mushroom and ham into a large bowl and add the cheese sauce. Mix well. Pour into a prepared dish, garnish and bake uncovered for 50 - 60 minutes, or until the potatoes are tender. Garnish with shredded cheese and parsley.
