Ingredients For frito casserole

  • 1 can
    (13 3/4 oz.) beef broth
  • 1 can
    (6 oz.) tomato paste
  • 1 can
    4.5 oz. green chilis
  • 1 pkg
    (1 1/4 oz.) taco seasoning
  • 1 c
    uncooked rice
  • 1 lb
    ground beef
  • 1 sm
    onion, chopped
  • 1 can
    (17 oz.) corn, drained
  • 1 bag
    (8 oz.) shredded colby or cheddar cheese
  • fritos corn chips

How To Make frito casserole

    In a small bowl, blend 1 cup beef broth, tomato paste, green chilis and taco seasoning mix; set aside.

    In a small sauce pan, over high heat, combine leftover beef broth and enough water to equal 1 3/4 cup liquid; heat to a boil, add rice and cook according to package directions.

    In a large skillet over medium high heat, brown beef and cook onion until tender. pour off fat.

    In a 2 quart casserole, layer 1/2 each of the rice, corn, meat, sauce and cheese. Repeat layers. Cover with lightly crushed fritos and bake uncovered in a 350 degree oven for 40 minutes.
