This recipe is really good. It can be made into 2 smaller casseroles bake 1 and freeze 1 for later. To bake a frozen casserole, thaw first. Other meats can be substituted for the ground beef. Try shredded chicken. Yum!

Ingredients For fiesta casserole

1 lblean ground beef

1 mdsweet onion , chopped

1 1/2 tspchopped garlic

1/2 tspsalt

italian seasoning, to taste

taco seasoning, to taste

1 canenchilada sauce
-
1 csalsa
-
6-8 ozfresh baby spinach
-
1 canblack beans, rinsed and drained

1small can niblets corn, drained
-
8 ozcream cheese
-
1 csour cream
-
1 cchopped olives (whatever kind you like)

2 ccrushed frito corn chips
-
2 cshredded mexican cheese
How To Make fiesta casserole

1In a skillet, over medium heat, brown the first 6 ingredients.

2Drain off the fat if necessary. Add salsa, black beans, enchilada sauce, corn, & spinach.

3Add cream cheese, sour cream, & olives. Cook for 5 minutes.

4Layer 1 cup of crushed fritos, 1/2 of the meat mixture, 3/4 cup cheese, 1 cup crushed fritos, the rest of the meat mixture, & the remainder of the cheese into a 9 x 13 casserole dish.

5Bake at 350 degrees for 30 minutes.
