easy beef and spinach pie

I use Bob's Red Mill buckwheat pancake mix, but it's also good with whole wheat. These make for a more savory flavor. This is so quick and easy and is a great weeknight meal.

Ingredients For easy beef and spinach pie

  • 2 c
    buckwheat pancake batter
  • 1 can
    spinach, drained well
  • 1 lb
    ground beef
  • 1 c
    diced onions
  • 3 Tbsp
    turmeric
  • To taste
    salt and pepper

How To Make easy beef and spinach pie

    Brown the beef with turmeric. Salt and pepper to taste.

    Drain the beef, using the fat to brown the onion. Add drained onion to beef and mix well.

    Spray 13x9 inch dish with cooking spray or grease dish. Spread beef/onion mixture into dish, then seasoned spinach (salt and pepper to taste).

    Prepare pancake batter according to directions then pour over spinach.

    Bake at 350 degrees for 40 minutes or until done.
