tasty ground beef stew from the pantry
I just arrived home after a short vacation and didn't feel like going shopping for food. So I checked out my freezer for ideas. Result- I defrosted a pound of ground beef, discovered a beef bone (I gather leftover roast bones in the freezer to make stock), and kidney beans that I had prepared and frozen. I chopped up some vegetables and a few other ingredients from the fridge and the pantry. I had brought a tiny bottle of red wine on my vacation. It all worked together - easy and delicious.

1 lblean ground beef

1/2 lgonion, small dice

1 stalkcelery, small dice

1/2 cred pepper, small dice

8 mdblack olives, halved

1 can48 oz. diced tomatoes

1 Tbsp(heaping tbsp) better than bouillon or other broth mix

2 cwater

1beef bone (optional)

1 Tbspchipotle paste

2 tspitalian herb mix

1 tspchili powder

2 Tbspkosher salt

few grinds of pepper

1/4 cred rice (or brown or white)

3/4 cred wine

1 ckidney beans, canned or home prepared from dry

1/2 cfrozen green beans or peas (for colour)
How To Make tasty ground beef stew from the pantry

1Heat the oil in a large heavy pot. Add the onions, celery, carrots, and red peppers and saute for a couple of minutes. Add the garlic and the ground beef and stir to break up the beef and brown it.

2Add the rest of the ingredients except the beans and simmer for an hour, then add the kidney beans. Simmer for another 5 minutes and add the green beans or peas.

3Simmer another 5 minutes. Taste for seasoning and serve. Freeze leftovers - if any.

4Serving ideas: Serve over mashed potatoes, rice or a baked potato. Top with a dollop of sour cream and/or shredded cheddar cheese. Have with a side dish of garlic toast or plain toast. Serve with a green side salad for a low carb meal.
