Ingredients For creamy tomato pasta

  • 31/2 c
    chicken stock
  • 2 c
    water
  • 12 oz
    linguine pasta
  • 4 oz
    goat or ricotta cheese
  • 1/4 c
    grated parmaesan cheese
  • 1 can
    diced tomatoes (14.5 oz)
  • 4 c
    fresh baby spinach

How To Make creamy tomato pasta

  • 1
    Bring stock and water to a boil for pasta.
  • 2
    Break pasta in half and place in stock. Cook 12-15 minutes stirring occasionally, or until most of the liquid is absorbed.

    Stir in cheeses until blended. Add tomatoes and spinach, stir until spinach wilts.
  • 4
    I wilted some of the spinach before I put it in with the pasta.
