I took part in a Head Start recipe cook off with a rice theme in 2000. This one was one I entered, and my daughter LOVED it!

Ingredients For country casserole

  • 2
    10 1/2 oz cans cream of mushroom soup
  • 10 1/2 oz
    cream of chicken soup
  • 1 can
    mushrooms
  • 1 bag
    frozen chopped broccoli
  • 2 1/2 c
    milk
  • 3 c
    minute rice, uncooked
  • 1 lb
    velveeta
  • 1 lb
    sausage, ham or chicken
  • salt and pepper

How To Make country casserole

    Cook meat until well done, set aside. Pour milk into microwave safe bowl, cube cheese and add to milk. Cook 5 min on high. Cream soups together, add broccoli, rice and mushrooms. Mix well and add meat. Stir cheese, cook another 3-4 min to melt completely. Pour over other ingredients, salt and pepper. Pour into 9x13. Bake 45-60 min at 375 degrees or until golden brown.

    Try with salad and garlic bread, or as a side dish with no meat added and fried chicken.
