I took part in a Head Start recipe cook off with a rice theme in 2000. This one was one I entered, and my daughter LOVED it!

Ingredients For country casserole

210 1/2 oz cans cream of mushroom soup

10 1/2 ozcream of chicken soup

1 canmushrooms
-
1 bagfrozen chopped broccoli

2 1/2 cmilk
-
3 cminute rice, uncooked

1 lbvelveeta
-
1 lbsausage, ham or chicken

salt and pepper
How To Make country casserole

1Cook meat until well done, set aside. Pour milk into microwave safe bowl, cube cheese and add to milk. Cook 5 min on high. Cream soups together, add broccoli, rice and mushrooms. Mix well and add meat. Stir cheese, cook another 3-4 min to melt completely. Pour over other ingredients, salt and pepper. Pour into 9x13. Bake 45-60 min at 375 degrees or until golden brown.

2Try with salad and garlic bread, or as a side dish with no meat added and fried chicken.
