This chicken and potato casserole is super easy. Just mix the ingredients, spread in a pan, and bake. Serve with a side salad or veggie.

Ingredients For chicken potato casserole

  • 1 bag
    frozen hash brown potatoes (32 oz)
  • 12 oz
    frozen broccoli florets
  • 3 thin
    chicken breasts, cooked and diced
  • 12-16 oz
    bacon, fried and diced
  • 2 c
    shredded cheddar cheese, divided
  • 2 can
    cream of chicken soup
  • 1/2 c
    milk
  • salt and pepper, to taste
  • garlic powder, to taste, optional
  • onion powder, to taste, optional

How To Make chicken potato casserole

    Preheat the oven to 350 degrees F. Empty the hash browns into a large mixing bowl. Add broccoli, chicken, bacon and 1 cup of the cheese.

    Add the cream of chicken soup and milk into the bowl. Mix until ingredients are combined. Season to taste with salt and pepper as well as garlic and onion powders, if using.

    Spray a 9x13 pan with cooking spray. Add mixture to the pan and top with remaining cup of cheese.

    Bake for 30 minutes or until hot and cheese is melted. Enjoy!
