Mom always made a good casserole, and this is definitely no exception!

Ingredients For chicken buffet casserole, mom's

  • 2 c
    wide noodles
  • 2 Tbsp
    butter
  • 2 Tbsp
    flour
  • 1 pkg
    frozen broccoli spears
  • 1 tsp
    salt
  • 1/4 tsp
    mustard, dry
  • 1/4 tsp
    pepper
  • 2 c
    milk
  • 1 c
    grated american cheese
  • 2 c
    turkey or chicken, diced
  • 1/3 c
    slivered almonds, toastede
  • 4
    eggs, beaten
  • 2 c
    milk
  • 1/2 tsp
    salt
  • 1/2 tsp
    mustard, dry
  • 1/8 tsp
    onion powder
  • dash
    pepper
  • 4 slice
    bacon, cooked, drained, crumbled

How To Make chicken buffet casserole, mom's

    Oven to 350 degrees. Cook noodles and broccoli until tender. Melt butter, stir in flour, salt, mustard, pepper and milk. Cook, stirring constantly, until thickened, remove from heat. Stir in cheese until melted. Drain noodles and broccoli, dice broccoli stems but leave florets whole. Arrange noodles, broccoli and meat in shallow casserole dish, pour cheese sauce over all. Arrange florets on top, press them lightly into sauce. Sprinkle with almonds. Bake uncovered 15 min or until hot.

    Note: Mom didn't mention what to do with the bacon. You could put it in before adding the cheese sauce, or sprinkle on top when you remove from the oven.
