This recipe is from a cookbook titled Campbell's Creative Cooking With Soup, printed in 1985. This is an easy and delicious casserole to make. In place of the mixed vegetables, feel free to use just peas, or diced carrots, or peas and carrots. Mixed vegetables here are just peas, carrot and corn, no green beans. Feel free to use any cheese you want as well. This is wide open to changes so you can make this your own recipe.

Ingredients For cheesy rice bake

  • 1 can
    creamy chicken mushroom soup (10 1/2 oz)
  • 1/3 c
    milk
  • 1 Tbsp
    fresh parsley chopped or 2 teaspoons dried
  • 2 c
    cooked rice
  • 1 can
    salmon, drained, flaked apart (15 oz)
  • 1 c
    mixed vegetables, cooked, drained
  • 1/2 c
    parmesan cheese

How To Make cheesy rice bake

    Preheat your oven to 180° C (350° F), get out a 7x11 baking dish.

    In a large mixing bowl, Mix together the Soup Option, milk, and parsley.

    Add the cooked rice, salmon, and mixed vegtables.

    Mix together.

    Pour mixture into the baking pan and spread out evenly.

    Sprinkle with cheese.

    Bake for 30 minutes or until heated through.
