Great casserole for left over chicken the pimentos and green chilies makes it extraordinary

Ingredients For cheesy chicken penne casserole

  • 2 c
    chicken, cooked chopped
  • 1 pkg
    penne pasta
  • 3 Tbsp
    butter
  • 3 Tbsp
    flour
  • 1 Tbsp
    chicken seasoning
  • 1 tsp
    poultry seasoning
  • 1 1/2 tsp
    onion powder
  • 1 c
    chicken stock
  • 1 c
    milk
  • 1 can
    small green chilies
  • 1 sm
    jar of pimentos
  • 2 c
    shredded cheddar cheese
  • 1/4 c
    sour cream
  • salt and pepper to taste
  • extra shredded cheese for topping
  • crushed saltines

How To Make cheesy chicken penne casserole

    Boil pasta according to package and drain
  • 2
    Preheat oven to 350 grease a casserole dish and add cooked pasta
  • 3
    Drain the chilies and pimento into the chicken stock
  • 4
    Heat butter over med heat add flour and spices and cook for a minute.
  • 5
    Whisk in milk and chicken stock. Stir until thickened
  • 6
    Remove from heat and stir in cheese and stir until melted.

    Stir in chicken, green chilies and pimentos add salt and pepper to taste

    Pour sauce mixture over pasta and add sour cream stir to combine everything together
  • 9
    Top with shredded cheese then crushed saltines. Grate some butter over the crackers and bake for 30 minutes
