Mark, knowing my daughter doesn't eat meats, found this recipe, said it was great, and shared it with me.

Ingredients For cashew nut casserole (mock chicken), mark

  • 3 oz
    margarine
  • 1 1/2 oz
    whole wheat flour
  • 1 tsp
    sea salt
  • fresh ground black pepper
  • 2/3 pt
    vegetable stock
  • 8 oz
    milk or soya milk
  • 3 oz
    mushrooms, chopped
  • 1 Tbsp
    chopped onion
  • vegetable oil
  • 5 oz
    cashew nuts
  • 2 oz
    black olives, stoned, pitted, sliced
  • 2 Tbsp
    white wine, optional

How To Make cashew nut casserole (mock chicken), mark

    Melt margarine in pan, stir in flour, sea salt and pepper. Take pan from heat and slowly add milk and vegetable stock and blend. Return pan to heat and stir constantly until it boils.

    Saute mushroom and onion in a little oil and add to pan. Add cashews, wine if using, and olives. Simmer gently for about 20 min.

    Serve over brown rice, with a side green salad.
