Mark, knowing my daughter doesn't eat meats, found this recipe, said it was great, and shared it with me.

Ingredients For cashew nut casserole (mock chicken), mark

3 ozmargarine

1 1/2 ozwhole wheat flour

1 tspsea salt

fresh ground black pepper

2/3 ptvegetable stock

8 ozmilk or soya milk

3 ozmushrooms, chopped

1 Tbspchopped onion
-
vegetable oil
-
5 ozcashew nuts
-
2 ozblack olives, stoned, pitted, sliced

2 Tbspwhite wine, optional
How To Make cashew nut casserole (mock chicken), mark

1Melt margarine in pan, stir in flour, sea salt and pepper. Take pan from heat and slowly add milk and vegetable stock and blend. Return pan to heat and stir constantly until it boils.

2Saute mushroom and onion in a little oil and add to pan. Add cashews, wine if using, and olives. Simmer gently for about 20 min.

3Serve over brown rice, with a side green salad.
