14 ozreduced sodium chicken broth

2 cwhole grain rice

1 Tbspolive oil

2chicken sausages, as low fat as posible

1bell pepper, diced

1 smonion, diced

1 ccelery, diced

1 cshrimp, peeled and deveined

2 tspchili powder or to taste

2 Tbspcumin

1 tspcayenne pepper

2 Tbspfresh parsley, chopped

salt, pepper and hot sauce to taste
How To Make cajun jambalaya, diabetic

1In a medium pot, bring chicken broth to a boil. Add rice, cover and reduce heat to simmer for about 30 minutes.

2Meanwhile, in a medium skillet, heat oil, then add whole chicken sausages. Allow sausages to cook on one side (about 5 minutes) then flip.

3Add onion, bell pepper, celery to skillet and season with chili powder, cumin, cayenne pepper, salt, and pepper. Reduce heat and cover, allowing to simmer for 15 minutes, adding shrimp about 5 mins before finish time. Remove sausage from skillet and cut into slices.

4Transfer sausages, shrimp, and veggies to pot and stir to combine with rice. Add hot sauce to taste and garnish with parsley. Serve and enjoy!
