Ingredients For breakfast casserole

  • 1 c
    jiffy baking mix
  • 1 lb
    ground sausage
  • 1 md
    onion diced
  • 1 md
    red bell pepper, diced optional
  • 4 bunch
    eggs
  • 1 1/2 c
    milk
  • 1 lb
    frozen cubed hash browns, thawed
  • 2 c
    cheese, shredded, divided
  • Pinches pinch
    salt and pepper

How To Make breakfast casserole

    Preheat oven to 400. Grease a 13x9 pan. Cook sausage in large skillet. Add onions and red pepper if using. Cook till sausage and onions are lightly browned. Drain and set aside. In separate bowl. Blend eggs, milk and baking mix. Add in sausage mixture, hash browns and 1 C. Cheese. Salt and pepper to taste. Mix well. Pour into pan. Bake 25-35 minutes or until toothpick inserted comes out clean. Sprinkle remaining cheese and return to oven until cheese melts.
