Bison was on sale, so I found a recipe that sounded pretty good and adjusted it to suit my family's taste!

Slow Cooker Crock Pot
Ingredients For bison ole!

1 lbground bison
-
6 ozuncooked white or brown rice

2 clovegarlic, minced or grated

1 (15 oz) canblack beans, drained and rinsed

1 (14 oz) candiced tomatoes, undrained

3/4 csalsa (any type)

1 tspcumin
-
1 tsporegano, dried
-
1 tspground chili powder
-
1/2 ctortilla or dorito chips, crumbled
-
1/2 cshredded cheese, mexican blend or cheddar or your choice
-
1 Tbspchopped cilantro
-
1 Tbspgreen onion, sliced
- LIME-CILANTRO CREME
-
2/3 csour cream
-
3 Tbspgreen onions, sliced
-
1 Tbspfresh cilantro, minced
-
1 tsplime zest
-
salt, to taste
How To Make bison ole!

1Preheat the oven to 350ºF. Cook rice according to directions; cover and keep warm.

2Cook ground bison and garlic over medium heat in a large skillet until meat is brown. Drain off fat.

3Stir cooked rice into cooked, drained ground bison in the skillet. Stir in beans, undrained tomatoes, salsa, oregano, cumin, and chili powder.

4Put bison mixture in an ungreased 2-quart baking dish. Bake, uncovered, for about 30. Sprinkle with tortilla chips and cheese. Bake, uncovered, for another 5 minutes until cheese is melted. Sprinkle with the 1 tablespoon each sliced green onion and chopped cilantro. Serve with Cilantro-Lime Cream.

5Cilantro-Lime Cream: Stir together the sour cream, finely chopped green onions, cilantro, and lime zest in a small bowl. Taste and add some salt if needed. Chill until just before serving.
