betty's apricot chicken
Not overly sweet and with no jam this meal is a regular in our home. I can have this on the table in 30 minutes. This re-heats really well and is even better the next day. Can be served with rice, buttered noodles or mashed potatoes.

2 lbchicken thighs, chopped into quarters

1large onion, chopped

1 canapricot nectar

1 cancream of chicken soup

1sachet french onion soup mix

1/2 cwater
How To Make betty's apricot chicken

1In a large heavy based saucepan, heat a little oil and fry the chicken until browned. Add the onion and cook for 2 - 3 minutes or until translucent.

2Add the remaining ingredients (use the water to get all the last little bits from the two cans).

3Turn heat to low and simmer for 20 minutes, stirring at least twice.
